DELISERDANG, Lecturers from the Faculty of Agriculture and Faculty of Engineering of Universitas Sumatera Utara (USU) Community Service (PKM) by innovating the manufacture of prebiotic-probiotic ice cream from Etawah Crossbred (PE) goat milk, at the Farmers' Joint Business Group, Tadukan Raga Village, STM Hilir District, Deliserdang Regency.
The community service which took place in July 2024 consisted of USU Lecturers from the Faculty of Agriculture and the Faculty of Engineering chaired by Dr. Nurzainah Ginting with members Prof. Zuhrina Masythah, Prof. Armansyah Ginting and Ir. Edhy Mirwandhono, M.Si and assisted by 4 students.
PKM Chair Dr. Nurzainah Ginting said that in this service, goat milk is first processed into curd containing various lactic acid bacteria. "The way to make curd is by fermenting goat milk in a bamboo tube for two days," she said.
Furthermore, said Dr. Nurzainah milk will curdle, have a fresh sour aroma and be delicious consumed either as curd or as an ingredient for making ice cream. "Making prebiotic and probiotic ice cream from goat's milk can be done by adding steamed and mashed nuts. Then add curd and put it into a mixture of ice cream ingredients such as sugar and cornstarch," he said.
He explained that the emergence of the innovative idea for making prebiotic ice cream from goat's milk began with a survey by the USU Lecturer Team who saw farmers in the Joint Farmer and Livestock Business group who had a lot of milk produced from crossbreeding Etawah (PE) goats with Saanen goats called Sapera goats (Saanen Etawah Crossbreed) became the mainstay dairy goat owned by the livestock group.
"Sapera goats produce milk in larger volumes than PE goats while consuming less feed. So that large milk production requires innovation in its processing. One of the processed products that is in demand by the public, especially with the hot weather like what is happening now is ice cream. And it turns out that this ice cream trial is very much liked by both students during the organoleptic test on campus and the organoleptic test in the livestock group," he said.
